Here is a recipe from Leo Henrichs of Tierra Negra – one of his favorites, and very simple.
Mussels a la Leo Henrichs
Wash them properly, prepare vegetable soup (cellery, carrots, onion, leeks.) Add 3 bay leaves, 6 juniper berries, 6 allspice, salt, pepper. make a vegetable based soup with 1/3 water and 2/3 white wine, put the mussels on top, close the pan, stir from time to time. eat when all mussels are open. enjoy
