Dessert Fruit Pizza
I’m not usually big on desserts, but every now and then is one that knocks my socks off! This was made by Pam Ferrucci in Livermore, CA.
(Spray pan with PAM or lightly oil so it doesn’t stick)
CRUST:
1 cup soft butter
1 cup powdered sugar
2 cups flour
dash of salt
Blend well. Press into 12“ pizza pan. Bake at 350 for 15 minutes until lightly brown
FILLING:
8 oz. cream cheese
1 tsp vanilla
½ cup sugar
Cream, then spread on cooled crust
FRUIT: Layer on whatever fruit you like:
strawberries
blueberries
raspberries
boysenberries
peaches
cherries
grapes
kiwi
pineapple
GLAZE TOPPING:
½ cup of water
½ cup of orange or pineapple juice
½ cup sugar
2 TBSP lemon juice
1 1/2 TBSP of cornstarch
Combine above glaze ingredients in sauce pan, bring to a boil. Cook one minute then cool. Spread over fruit.
Chill until topping gels.
