Muriel’s Fine Caribbean Rice

Here’s a modification of a recipe from Ron Fine.

Ingredients

  • 1 small onion, chopped
  • 1 shallot, chopped
  • 1 garlic clove
  • 1 tbsp olive oil
  • 2 cups basmati rice
  • 2 cups chicken broth
  • 2 cups water
  • 1 can black beans, drained
  • 1 tbsp thyme
  • 1 Jalapeño pepper, cut in half and de-seeded
  • salt and pepper to taste
  • mushrooms (optional)

Instructions

  1. Sauté onions, garlic, shallots and olive oil on high heat for 8 minutes in a 2 quart pot
  2. Add rice and stir each minute for three minutes
  3. Add chicken broth and water
  4. Add salt, pepper, black beans, thyme, jalapeño pepper, and mushrooms (optional)
  5. Bring to boil
  6. Cover and reduce to simmer for 20 minutes  (or until water evaporates and rice is moist)
